The Magic of Mushrooms

Mushrooms are the star of this dish, bringing a meaty texture and earthy flavour to the pasta. You have a variety of options when it comes to selecting mushrooms for this recipe. Cremini, white, portobello, or even shiitake mushrooms will all work wonderfully. Choose whichever variety you prefer or mix them for a more diverse flavor profile. If you’re feeling adventurous, you can even try oyster or chanterelle mushrooms to add a touch of elegance to your dish. I stuck to chestnut mushrooms this time, but I’ll mix them up a bit in the future!

Mushrooms are not only delicious but also packed with nutrients. They are a great source of vitamins B and D, as well as minerals like potassium and selenium. Mushrooms are also low in calories and fat, making them an excellent addition to a healthy and balanced diet. So, by enjoying this plant-based mushroom and garlic pasta, you’re not only treating your taste buds but also nourishing your body.

Choosing the Perfect Pasta

The choice of pasta for this recipe is entirely up to you. Long-shaped varieties like spaghetti, linguine, or fettuccine work well. The thin strands of pasta are ideal for capturing the sauce and clinging to the mushrooms. If you prefer a gluten-free option, there are excellent gluten-free pasta brands available that will work just as well.

Consider trying Zenb Quick Cook Pasta Agile, a brand known for its high-quality, plant-based products. Zenb pasta is made from 100% yellow peas, providing a good source of protein and fibre. Not only is it a nutritious choice, but it also cooks quickly, saving you time in the kitchen. You can find Zenb products at your local grocery store or online at zenb.co.uk. Give it a try and see how it works well with your plant-based mushroom and garlic pasta to new heights.

Making your own sauce

In the recipe below, I use the Zenb Mushroom ragu. But if you don’t have this, make your own creamy garlic sauce with coconut milk.

Coconut milk provides a creamy and velvety texture while remaining light and refreshing. Don’t worry, the coconut flavour won’t dominate the dish; it simply enhances the overall creaminess.

To make the sauce fry the shallots in oil until cooked and then, sauté the minced garlic in a little olive oil until fragrant. This step releases the aromatic oils of the garlic, infusing the sauce with its distinct flavour. Next, add the sliced mushrooms and cook until they become tender and slightly caramelised. This process intensifies their savoury taste and adds depth to the dish. Season with salt, pepper, and any herbs or spices you prefer, such as thyme or rosemary. You can even add some Sodium Bicarbonate (Baking Soda) for a crispier, snappier texture.

Once the mushrooms are cooked to perfection, it’s time to pour in the coconut milk instead of the mushroom ragu. Stir everything together and let the sauce simmer gently, allowing the flavours to meld. The coconut milk will thicken slightly, creating a luxurious sauce that coats each strand of pasta. The result is a harmonious blend of creamy, garlicky goodness that will have you coming back for seconds.

Now, sit back, take a moment to appreciate the delicious aroma, and dive into a bowl of creamy, plant-based goodness. This dish is perfect for a cosy dinner at home, a quick weekday meal, or even for impressing guests at a dinner party. It’s a versatile recipe that can be enjoyed on its own or paired with a side salad or some crusty bread.

This looks so gorgeous! I don’t like mushrooms that much, but I know how good they are so I like to add them to recipes like this. Thank you for sharing your recipe 🙂 x

This looks delicious. I’ve been eating mostly pasta recently, as it’s quick and easy and not too bad to cook when it’s too hot. It’s great hot or cold and it’s SO versatile. It’s literally the best thing to grace this Earth and that’s a hill I’m willing to die on. This looks amazing. Anything with garlic in it, and I’m there.
