Their pasta is now stocked in over 450 independent retailers and appears on select restaurant menus. Their commitment to sustainability includes sourcing flour from nearby mills, using solar power in their factory, and packaging in paper rather than plastic.

Two & One Olive Oil

Two&One started in Hampshire. Although it was established in 2004, the story begins back in 1884 with Lola’s Great-Great-Grandfather.

The selection of extra-virgin olive oils is crafted by hand, spanning three harvests each season. They also offer a membership that provides fantastic benefits throughout the years. There are also some lovely gift sets to give to friends and family who love cooking.

My Summer Pasta Dish

With pasta, I believe the simplest ingredients are often the best. As long as they are fresh, you don’t need to complicate things. I usually fry garlic and chilli for a quick and delicious pasta meal.

This time, I tried something new. This isn’t complicated. Ingredients are by taste, so you can adjust as you feel fit (I always put loads of garlic in!). I’m a big fan of dishes you can eyeball.

For this recipe, I kept things simple — good olive oil, garlic, chilli, anchovy, spinach, and the pasta. I used mezze maniche rigate from The Yorkshire Pasta Company, as its shape holds sauce nicely. (You could also substitute another short pasta shape from their range.)

Here’s what I did:

  • Fry onions in olive oil
  • Add crushed garlic and chopped anchovies
  • Cook pasta to al dente, then toss with spinach, chilli flakes, and a touch more oil
  • Finish with freshly grated Parmesan and a crisp side salad

The result is light, fresh, and perfect for warm evenings.
